Signature Red
Cabernet Franc/Petit Verdot
Cabernet Franc is one varietal of higher quality and reputation grown worldwide. It is very similar to Cabernet Sauvignon, but ripens at least one week before. This feature allows it to thrive in climates slightly cooler. Cab Franc is very aromatic and is also rich in tannins and colour that make it very suitable for parenting a blend. Petit Verdot is also one of the traditional classic black grape varieties used for blending in Bordeaux. Winemakers generally use the Petit Verdot grapes as chefs would use seasoning. The “spice box” contribution this grape adds to wine is dense fruit, dark colour, black fruit flavours, and heavy tannins. By blending these two powerful wines we have reached a very elegant full body wine with balanced acidity, noted for their minerality and depth of colour among its notes of spicy, raspberry, cassis and violets.
Food Pairings: Cab Franc/Petit Verdot Blend pairs well with BBQ lamb chops, pork spare ribs, duck and other rich meats. Hearty casseroles and mature cheeses will also match well.
Bordeaux Style
French Bordeaux Blend consists of the five big grapes. Cabernet Sauvignon and/or Merlot are usually playing the lead role, while Cab Franc, Malbec, and Petit Verdot act as the supporting cast. These three grapes help to add structure, colour and body in various amounts. Bordeaux Blend typically but not exclusively, uses at least three of the five grapes to be labeled as such.
Each year the percentage of each grape in the blend can vary and the winemaker can include more of the variety that excelled in that particular vintage.
Food Pairings: Bordeaux Blend is excellent with beef, lamb, and grilled veal, game such as pheasant, and poultry such as grilled turkey. Other good accompaniments are couscous, tandoori spices and pâtés.
Big Red BBQ Blend
It is a blend of Cabernet Franc, Cabernet Sauvignon, Merlot, Petit Verdot and Sangiovese. Full bodied, a dark colour, both brilliant and deep, an aromatic nose and long, well-balanced palate. Initial fruity and floral aromas develop into a subtle bouquet of wood, spice and smell associated with a particular vineyard. On the palate, tannin becomes more soft and round. Perfect for any BBQ event!!!
Food Pairings: When it comes to this Big Red BBQ Blend the obvious match is a great grilled steak. Follow your dinner with some cheese, nuts and fruit. Stronger cheeses work best with the dryness and tannins in this blend.
Spanish Blend
Spanish Blend is a blend of Tempranillo and Granacha from Tinto Spain. Full bodied red wine.
Typical of the Rioja wine from Spain. Granacha adds body and additional raspberry flavours, often with a spicy accent. Tempranillo offers a range of flavours from lighter red fruit such as strawberries and cherries, through to richer and riper flavours such as prunes, chocolate and stewed fruit.
Food Pairings: Spring Lamb chops, crumb roasted eggplant with a tomato & basil ragout.
Tuscan Blend
Tuscan Blend is more like the Super Tuscan Blend and is influenced by the Bordeaux style. Adrian has blended Sangiovese, Cabernet Sauvignon and Merlot. Tuscany is famous for its red wines made from the Sangiovese Grape. Chianti is permitted to use as little as 75% Sangiovese and is often blended with a maximum of 10% Canaiolo, up to 10% of the white wine grapes Malvasia and Trebbiano and up to 15% of any other red wine grape grown in the region, such as Cabernet Sauvignon.
Food Pairings: The Tuscan people are big meat eaters and Super Tuscans are perfect accompaniments to grilled steaks and roasts. Bitter vegetables like rapini and kale make fine accoutrements and also polenta, stewed white beans and porcini mushrooms.
Tempranillo (Spain)
Up until the 17th century Tempranillo type vines remained confined to mainland Spain, where they were best suited to the slightly cooler climate of the Northern Provinces. Here the regions of La Rioja (Spain) and Valdepenas historically made them their most important variety and they still make up the majority grape of their finest blends.
Food Pairing: Tempranillo wines are one of the most food friendly wines around. They offer versatility and value – without forsaking flavour and lift. Consider pairing them with their hometown favorites – tapas, pork grilled or roasted entrees.
Malbec
A midseason ripener, it can bring very deep colour, ample tannin and a particular plum like flavour wine with characteristics of blackberries, licorice and spices on the nose and the palate.
Food Pairings: Pairs well with barbecued meats, Mexican foods and don’t forget to add a little spice.
Carménère (Chile)
Like Cabernet Sauvignon, Carménère wine is a deep red, and has a rich aroma of spice and fruit. Unlike Cabernet Sauvignon, the tannins in Carménère wine tend to be much softer, and it is drinkable at relatively young ages. In recent years however, more and more wineries have begun to produce pure Carménère wine, full of cherry, earth and in some cases dark bitters.
Food Pairing: Carménère is divine with savoury dishes especially earthy stews and moderately spicy or even hot spicy dishes. It goes well with vegetables alone or meats and vegetables. It also handles spicy dishes off the grill perfectly.
California Red Blend
California Red Blend is a blend of Cabernet Sauvignon, Merlot and Shiraz. This blend is decidedly New World in approach, but has been adopted by various Old World producers over the past couple of decades, notably those in Spain, California and southern France. This change has come in response to market demands, and goes against the grain of tradition. There is little or no precedent in any French wine region for blending Rhone Valley varieties such as (Syrah) Shiraz with the Bordeaux varieties. Cabernet adds bold, tannic, oaky, strong flavours while Shiraz adds spicy and dark colour. Merlot adds lush less acidic, herbal moderate notes. Together they make a great full bodied red blend.
Food Pairings: This blend works well with hard cheeses, Pasta with tomato sauce and is excellent with duck.
Amarone Style (Italy)
Amarone originated in the Veneto region of North – Eastern Italy, and is arguably the region’s most prestigious red wine. Winemakers searched for the way to increase body, complexity and alcohol content of their wines in order to concentrate the natural sugars and aromatics in Valpolicella wines. Local producers began drying their grapes after harvest, to remove water from the berries while retaining sweetness and flavour. Almost black in colour and a nose of spice, tar and dried berries, it is rich in flavours of dried fruit and prunes typically of wines made from dried grapes.
Food Pairings: Robust pastas, braised meats and hearty beef stews pair well with this smooth wine.
Brunello Style (Italy)
Brunello is one of Italy’s most famous and prestigious wines. In Tuscany, its homeland, it shares the top spot with only the highly-prized Vino Nobile di Montepulciano and of course the ubiquitous Chianti. Modernists set the ball rolling for a ‘fruitier’ style in the 1980s, which made the wine less tannic. Sangiovese grapes are transformed into a wine with Robust characters that are world renowned.
Food Pairings: Brunello is a great wine that deserves something substantial, a fine roast leg of lamb with rosemary, pot roast pheasant, and roast squab with truffles or that most famous dish of all bistecca alla Fiorentina, Tuscan-style steak, ideally sourced from the indigenous Chianina beef.
Signature White
Napa Blend
Napa Blend from California is a true California wine, with five white grape varietals Chardonnay, Sauvignon Blanc, Muscat Canelli, Viogneier and Semillon – sourced from Napa, Monterey, Santa Barbara and Tulare counties. Food Pairings: This is a blend of five varietals with just a hint of sweetness there is really no limit to what you can pair. Chicken, Seafood, Steak, Lamb, Salads, Desserts, you name it!
Sauvignon Blanc / Chardonnay
Sauvignon Blanc/Chardonnay from California is a blend of two grape varieties that traditionally produced two very different styles of wine. Chardonnay being rich, round and buttery. While Sauvignon Blanc is more fresh, aromatic and zingy. Somewhat surprising then, this non-traditional blend is produced almost as widely as the varieties plantings. It crops up in France (particularly Cheverny), various parts of Italy, Spain, Israel, California Australia, Chile and South Africa, with a wide range of results.
Food Pairings: Rabbit and pistachio terrine, Smoked Salmon, Sushi, and oven baked Salmon are but a few pairings with are unique blend.
Italian White
Italian White is a blend of Pinot Grigio, Sauvignon Blanc and Inzolia. Pinot Gris, the weightiest of the three, gives the blend its body, Sauvignon adds more acid and freshness. Inzolia is from Sicily and adds a gentle aromatic nose, a lemon and fruity palate and a fresh, clean, spicy finish. The blend typically displays various stone fruit flavours, highlighted by peach, nectarine and apricot, and sometimes has a high level of alcohol if the Pinot Gris is grown in a hot climate.
Food Pairings: Citrus Cooked Fish, Thai Green Curry, Crab meat salad, or Gnocchi in a light cream sauce.
White Bordeaux Blend

Food Pairings: This easy to drink wine is delicious with grilled fish, shell fish or on its own as an aperitif.
Spanish White Blend
Our Spanish White is a blend of Spain’s most popular grapes; Garnacha Blanca, Sauvignon Blanc, Muscatel and Palomino. Garnacha Blanc and Sauvignon Blanc bring elements of green apple, herb and minerality, while Muscatel and Palomino bring the light, refreshing body and golden colour.
Food Pairings: The blend pairs well with seafood, especially shellfish.
South American White Blend
Torrontes and Pinot Grigio from Argentina and Chardonnay from Chile make up this incredible South American blend. Torrontes is an aromatic wine with moderate acidity. Pinot Grigio smells like white fruit and jasmine and Chardonnay brings the straw, yellow colour, and a smooth pleasant finish on the palate.
Food Pairings: You could pair this delicious wine with poultry, fish, tofu or Autumn vegetables because they will not overwhelm the aromatics, flavour and acidity in the wine.
Classic
The classic juices feature wines of extraordinary sophistication and taste. From world- renowned vineyards, that offer fewer grapes on the vine. When the grapes are cultivated this way, they produce a richer, fuller bodied wine, with higher alcohol content. The Classic Juice Series creates wines that display the unique characteristics that are inherent to specific regions such as The Russian River and Rutherford in California. Vin Bon Classic Juices explode with increased intensity of colour, flavour and bouquet.
